Barbara was an esteemed and respected professor of Nutrition and Dietetics at Western Carolina University for 22 years where she earned many awards for outstanding teaching and service. Barbara was an active member of Webster Baptist Church and cherished her time learning with friends in weekly Bible study.
Barbara held degrees from the University of Alabama (Bachelors and Masters of Science in Nutrition) and a PhD. in Nutrition from Kansas State University. She was a member of numerous professional societies, supporting others in their individual learning while expanding her own knowledge and contributing to the advancement of the field of Nutrition and Dietetics.
Barbara was also a talented artist in stained glass, basket weaving, wood carving, Bible study, photography, and building bird houses and feeders. She enjoyed sharing her talents and teaching at the Senior Center.
Barbara shared her heart and home with several dogs over the years. They were a part of her family and brought immense joy to her life. Barbara loved long walks with friends in “her mountains” of western North Carolina. She enjoyed her students and was committed to their success in life. Most of all, Barbara loved Jesus Christ, and tried to follow His example to care for those in her community. She will be missed by all who knew her.
The family wishes to extend heartfelt gratitude to Hospice of Jackson County for their loving care and faithful attention to Barbara. We also thank the dedicated staff of the Hermitage Memory Care unit in Dillsboro for their affection, care, and love of Barbara.
